    0.25 teasp rosemary

    0.25 teasp oregano
    1 tablesp paprika
    0.5 cup tomato paste
    corn oil 0.5 tbsp
    olive oil 1.0 tbsp
    water (hot) 2 cups
freshly ground black pepper 1 teasp or to taste
    dash of salt if required

Directions

Cut pork into approx 1inch cubes
Put the olive oil and corn oil into a medium size deep saucepan and heat. Add the pork, turning over till it starts to brown a little. Turn the heat down and add the chopped onion, the garlic, the peppers and the potato chunks and stir around for a few minutes.
Add the herbs and the paprika & stir to mix in.
Now add the hot water and mix in the tomato paste.
Bring to boil then turn down heat and simmer until potatoes are soft and sauce has reduced to become quite thick. You may need to add more hot water as it cooks so keep an eye on it!
Add salt and pepper towards end of cooking. You may not need salt as tomato paste usually contains salt.
Serve with wholemeal pitta bread or chunks of wholemeal bread.
