    1 cup flour
    1/4 tsp salt
    1 tsp vanilla extract
    1 tbsp milled flaxseed
    2 tbsp water
    2 tbsp applesauce
    1 tbsp raw sugar (turbinado)
    1 cup soymilk
    2 tsp baking powder


Mix all dry ingredients together except flaxseed. Beat flaxseed with 2 tbsp water in separate cup until well-blended and let sit 2-3 minutes. Mix all wet ingredients together and add to dry ingredients. Mix well and add in flaxseed mixture. Stir together until fully moistened. This makes 8-4" pancakes. Very delicious and sweet. They aren't super fluffy, but adding a smidge of baking soda would help with that if you need it. This is perfect topped with sugar-free jam or preserves.

  • These pancakes were very nice... except for one not-so-small problem: the amount of salt is WAY too much! I will make these again, but I'm going to cut the salt to 1/4 tsp rather than the whole tsp.

    Edited to add that with the salt fixed, these pancakes rocked my little vegan family!
