Introduction

Ingredients

    1.75 cups dried Pinto beans/brown beans
    8 cups water
    1 teasp baking soda
    1.5 teasp salt
    1/3rd cup white vinegar/cider vinegar
    1/2 cup dark corn syrup or treacle
    2 tablesp brown sugar

Directions

Rinse dried beans then cook for 30 mins, covered, in the water to which the baking soda has been added.
Turn off heat. Let stand for 2 hours covered.
Drain.
Add remaining ingredients and water to barely cover the mixture.
Cook in a tightly covered pot at minimal heat for 1 hr or until tender. This tenderizes the bean skins without breaking them.

You can then use as a main course with rice and a green vegetable e.g spinach/broccoli.
It is possible to use canned beans and shorten the cooking time.
You can also add in chopped onions etc
Serves 3 to 4
