Number of Servings: 1

Ingredients

    1. 3 chicken thighs, bones and skin removed
    2. 1/2 tsp curry powder
    3. 1/2 tsp ground coriander
    4. 1/2 tsp ground cumin
    5. 1/4 tsp ground ginger
    6. 1/2 tsp salt, divided
    7. 6 oz fat free plain yogurt
    8. 1 Tbsp finely chopped cilantro
    9. 1 garlic clove
    Cooking spray

Directions

1, In a shallow bowl mix curry powder, coriander, cumin, ginger and 1/4 tsp of salt.
2. Sprinkle spices evenly over chicken thighs.
3. Coat pan with sooking spray, Add chicken and cook on meadium high for 6 minutes on each side.
4. Meanwhile combine yogurt, cilantro, garlic and remaining 1/4 tsp of salt in a bowl.
5. Serve chicken over a serving of couscous or brown rice with yogurt sauce.

Yield: 3 servings (1 chicken thigh and 2 oz of sauce)
