2 Vidalia onions (or other sweet onion), peeled and cut in half crosswise
    2-3 Tablespoons Balsamic vinegar
1 Tablespoons low-sodium Tamari (or Bragg Liquid Aminos)

Preheat oven to 300 degrees.
Put onions in a pan and sprinkle with balsamic vinegar and a little Bragg Liquid Aminos orTamari.
Cover with a lid or foil and bake for a few hours. Even better, if you have enough time, set the oven at 250 degrees and bake all afternoon! The longer you bake, the sweeter they become. Eat these plain, or serve on brown rice or baked potatoes.
