Number of Servings: 9


    1 1/4 c all-purpose flour
    3/4 c Quaker Corn Meal
    1/4 c sugar
    2 tsp baking powder
    1/2 teaspoon salt (optional)
    1 c skim milk
    1/4 c vegetable oil
    2 egg whites


Heat oven to 400 degrees F. Grease 8-9" pan. Combine dry ingredients. Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan. Bake 20 to 25 minutes or until light golden brown and wooden pick inserted in center comes out clean. Serve warm. 9 servings

  • I substitute vegetable oil for coconut oil; sugar for Truvia Baking Blend. I also use a half cup of almond flour and 3/4 cup unbleached white whole wheat flour instead of the all-purpose flour. Sometimes I sub the skim milk for unsweetened vanilla almond milk. It takes great with or without subs. - 12/6/14
