Pasta w/spinach, beans + chicken

Number of Servings: 6


    1 (15 oz. can) Great northern beans- drain + rinse well
    1 (14.5 oz. can) Petite diced tomatoes
    Farfalle or other pasta (2.25 cups-uncooked)
    Fresh spinach, 2 cups
    1 c bruschetta sauce (or else,chunky pasta sauce)
    1# Chicken breasts,halved (cut in half-again)

    Optional: Recipe can also be done as Vegetarian without the chicken. It is a delicious and low cal meal.


1 cup + 1/3 c (each serving)


Season 3 half chicken breasts (1#) with Herbs de Provence, drizzle of olive oil and cracked pepper.
Bake at 400 degrees for 20 minutes or until thoroughly cooked. When cooked, cut in half again and set aside.

Boil pasta according to directions, then set aside when done. Drain + rinse beans, Then add beans, tomatoes, chunky sauce, and spinach to a large pot or fry pan. Simmer until cooked thoroughly. Add drained pasta and heat a few minutes longer, mixing all to combine.
Sometimes I keep pasta aside and then add sauce
when ready to serve if I have an abundance of sauce.

Six servings: 1-1/3 cup each
