    2 1/2 cups sifted flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp ground cinnamon
    1 tsp pumpkin pie spice
    1/2 tsp salt
    3/4 cup packed brown sugar
    3/4 cup granulated sugar
    1 stick softened butter
    1 egg
    1 cup pumpkin
    1 tsp vanilla


Sift flour, baking powder, baking soda, cinnamon, pumpkin pie spice and salt together.

Beat butter and both sugars in a large bowl. Add pumpkin, egg, and vanilla until well mixed.

Slowly add flour until all ingredients are incorporated.

Drop by rounded tablespoons onto greased cookie sheet (you can fit 12 cookies/sheet) Bake 350 for 10-12 minutes.

Cool on wire racks.

Makes 44 cookies (1 cookie per serving)
