Makes 24 mini pecan tarts. Makes 24 mini pecan tarts.

    3 oz. Reduced Fat Cream Cheese
    1/4 cup melted butter
    1/2 cup sifted flour
    1/2 cup Almond Meal Flour


    6 oz. chopped pecans or walnuts,
    6 Tbsp. Splenda Brown Sugar Blend
    1 egg slightly beaten
    2 Tbsp. melted butter
    few drops of vanilla
    powdered sugar (dusted over the top after baking - optional)


Preheat the oven to 350. Spray two "mini muffin pans" (12 muffins each) with Baking Pam. Note: If using non-stick pans, decrease temperature 20 325.

First mix all crust ingredients and knead until well blended. Roll (with your hands, not a rolling pin) the dough into 24 little balls. Press one ball into each cup of the muffin pans, pressing the dough down and up the sides so that just a little bit is visible above the rim of each cup. Pampered Chef and some other stores have a little tool that makes this process much easier. Place two or three nuts in each cup and set aside.

Mix sugar, egg, butter and vanilla until mixture is smooth. Pour mixture over the nuts, filling each cup no more than half way (it rises in the cooking process).

Bake at 350 for 15-17 minutes. Turn the oven down to 275, and bake for an additional 10 minutes. (Remember to adjust these temperatures down by 25 degrees if using non-stick).

Remove from pan immediately, and dust with powdered sugar, if desired.
