Introduction

Saute a mix of vegetables for use in omelets, pilafs, sandwiches Saute a mix of vegetables for use in omelets, pilafs, sandwiches

Ingredients

    Mixed red, yellow & orange mini peppers sliced
    onion, diced
    mushrooms, sliced
    spinach washed

Directions

Heat a saute pan. Spray with olive oil . Put in onions. (I used frozen diced onions, so there was some popping and crackling). Saute for two minutes. Add the peppers. Saute 2-3 minutes more. Add mushrooms. Cook another 5 minutes. Rinse the spinach, and put it in the pan, with water still clinging to leaves. Saute another 5 minutes, stirring and tossing occasionally . Add optional seasonings, such as Penzey's Mural of Flavor, Fines Herbs, or Mrs. Dash's seasonings.

For an omelet I use about half a cup. Makes 6 1/2 cup servings.
