    2 medium baking potatoes
    2 wedges Light French Onion Laughing Cow Cheese
    1/4 cup shredded cheddar cheese
    3 slices crumbled bacon
    2 TBSP skim milk
    Salt & Pepper to taste


Preheat oven to 400 degrees

Poke a few holes in potatoes with a fork and bake for 45 minutes or until tender. Remove and set aside until cool enough to handle, about 10 minutes.

Reduce oven temp to 375 degrees.

Cut potatoes in half lengthwise and gently scoop out the flesh of each half. Mash potatoes with Laughing Cow and milk. Stuff potato mixture back into skins and top with cheddar cheese and bacon.

Bake for 15 more minutes.
