    1/4c. + 2 tbsp. Bertolli Extra light tasting olive oil
    3/4c. splenda
    3/4c. packed brown sugar
    1 1/2 c. mashed cooked butternut squash
    2 eggs
    2 1/2 c. regular flour
    1 tsp. baking soda
    2 tsp cinnamon
    1/2 tsp salt
    1/2 tsp. nutmeg
    1/4 tsp ground ginger
    1 c. raisins
    1/4 tsp. allspice
    2 1/2 tsp. baking powder


1. In large bowl cream oil and sugars until fluffy
2. Beat in eggs and squash
3. Stir well
4. sift together flour, baking soda, baking powder, and spices. Add to mixture, mixing until well blended.
5. Stir in raisons
6. Spoon onto cookie sheets. Bake at 375 degrees for 10 to 12 minutes.
Tip: use a cookie scoop to drop cookies. makes more uniform portions.
Makes 45 cookies
