Number of Servings: 8

Ingredients

    2-4 Tbsp. Olive Oil
    16 oz. boneless skinless chicken, cut into chunks
    Handful of fresh basil
    Sprinkle of oregano
    Salt & pepper
    2 cloves garlic
    1 medium onion, chopped
    1 red pepper, sliced
    18 oz. chicken broth
    1 cup orzo
    2 zucchini, chopped
    1 can Hunts Petite Diced Tomatoes (could use basil & oregano or plain)

Directions

Heat the olive oil in large skillet. Cook the chicken and garlic with herbs, add onion and red pepper and saute lightly. Add broth and bring to simmer, then add orzo and cover with a tight fitting lid. Simmer for 6 minutes. Stir in remaining vegetables and continue to simmer an additional 2 minutes. Makes 8 servings.
