    3 cloves Garlic finely chopped
    3 medium onions about 500 grams roughly chopped
    2 tbsp Olive Oil
    3 carrots about 270 grams sliced
    3 baby Zucchini (Courgettes) about 83 grams sliced
    500 grams leftover cooked beef roast all fat removed
    2 beef stock cubes made up 1 pint
    Splash lea & Perrins
    tbsp tomato ketchup
    3 tsp grated fresh ginger
    tsp horseradish
    1 can mixed bean salad in water
    532 grams mushrooms quartered
    1/2 jar onion marmalade


A great meal to cook ahead makes approximately 12 servings
Fry onions and garlic until soft and translucent in olive oil
add carrots and cougettes and cook for about 2 minutes
add diced beef stir well and add stock
add grated ginger, mushrooms and the drained can of mixed bean salad.
stir well
finally add tomato ketchup, onion marmalade and horseradish sauce stir again, and either simmer on a low heat on the stove or cook in a medium hot oven 170 C for about an hour
