Ingredients

    1 cup quinoa
    2.5 cups vegetable broth
    1tsp chopped garlic
    2 Tbsp chopped ginger
    3/4 tsp whole cumin seed
    2 medium red bell peppers cut in strips
    1 large onion cut into thin wedges
    1 can (19oz0 black beans drained and rinsed
    1/4 c chopped cilantro

Directions

rinse quinoa. bring 2 cups of broth to a boil in saucepan. add quinoa and return to boil. reduce heat to low and simmer 20 min.

heat oil over medium heat. add garlic, ginger, and cumin seeds and cook for 2 minutes. Add peppers and onion and cook until tender. Stir in beans and remining broth and cook for 2 minutes.

Fluff quinoa with fork and stir in cilantro. top with pepper mixture.

    Amazing! I've never had quinoa before but I was excited to try it. I left out the beans, since I was making this as a side dish to some pan-fried salmon. I also used ground ginger (cuz that's what I had) and I left out the cilantro (didn't have any). I will take the rest cold for lunch tomorrow. :) - 1/22/10

    After starting the recipe, realized I didn't have red peppers. So, sauted celery, carrot & red onion instead. Used ground cumin as I had no cumin seeds. Very tasty! - 6/10/13

    This makes 4 HUGE servings (can be a veg. main meal) or 8 sides. I had to use cannellini beans (was out of black) and 1/2 jar of roasted red peppers making this recipe easily adaptable for what you have on hand. Thanks for posting this recipe! - 7/23/08
