With Quinoa & Brown Rice Medley, Ground Turkey Sausage & Apples With Quinoa & Brown Rice Medley, Ground Turkey Sausage & Apples

    1.25 cup Red Quinoa & Brown Rice Medley
    4 oz Turkey Breakfast Sausage
    1 medium Acorn Squash, halved and seeded
    1/2 cup chopped apple
    1 tbl crushed coriander
    3/4 cup shredded Monterey Jack Cheese


Makes 2 servings (1/2 squash = 1 serving)

- Get out all of your ingredients and heat up whole squash in microwave for 1.5 minutes
- While this is heating chop up your apple and measure out the rice
- Get the squash from the microwave and cut in half, remove seeds and membrane
- Put squash cut side down onto a plate and place back into the microwave for 5 minutes
- While the squash is cooking in the microwave brown the sausage in a skillet and heat up the rice in a non stick pot
- Separate grease from sausage and put sausage into a bowl with the coriander, apples, and rice mix
- Once the squash is done separate the mix into two and stuff the squash halves evenly with the mix*
- Cover each squash half with plastic wrap and put back in microwave for 5 minutes each**
- After squash is done, remove from microwave and take off plastic wrap. Shred cheese over halves and place back in microwave for an additional 1 minute each half.
- Let cool approximately 5 minutes before serving/eating to let the insides cool to eating temperature

* Best if served and cooked in a bowl or high sided dish so that it won't slip around too much on a plate when mixing and eating
** I highly recommend cooking the stuffed squash halves separately so they are cooked evenly throughout

  • Pretty good dish. Was thrown off by the Calorie count becasue it did not have all the ingedents and some were lisited 2x. When I broke mine down i got 509 Calories (i added Mapple Sryup) 55 Carbs, 13 Fat, and 24 Protien. - 2/3/11
