    1 large egg yolk
    1 1/2 tsp of dijon mustard
    1 1/2 tsp white wine vinegar
    1/2 tsp sea salt
    1/4 tsp freshly ground black pepper
    1 cup oil


Blend all ingredients except oil in a blender. With the motor running SLOWLY add 1/4 of the oil in a slow, steady stream. The mixture should be smooth and creamy
Add the rest of the oil, a little quicker now, with the motor still running. Blend just until oil is incorporated. Transfer may to a clean container with a lid.
Will keep in the refridgerator for two weeks.
