Ingredients
-
1/2 cup chopped onion
2 cloves garlic minced
1 tub (13 oz) frozen chopped green chile or 1 1/2 cups chopped green chile
1/2 cup petite diced tomatoes
2 cups chicken stock
1 tsp salt
1 T cornstarch
Directions
Sautee Onions in a little PAM. Add a bit of salt to sweat the onions. Once the onions are translucent, add garlic, green chile, tomatoes, stock and salt. Let simmer. Meanwhile, in a small mug, add cornstarch and a couple tablespoons water, and mix together to make a slurry. Add slurry to green chile and stir until combined. Let come to a boil. If it needs to be a bit thicker (consistency of a gravy), make another slurry, add it to the sauce and let come to a boil again.
