Lowfat baked ziti with broccoli. Lowfat baked ziti with broccoli.

    8 oz. whole-grain ziti
    1 head broccoli, cut into 1/2-inch pieces
    1 T olive oil
    1/4 t salt
    1/4 t pepper
    2 T fresh basil, shredded, or 2 t dried basil
    1 can (14.5 oz) diced tomatoes
    1/4 c. shredded part-skim mozzarella


Makes 4 servings.

Preheat oven to 400 degrees F. Cook the pasta according to the package directions. After draining, return ziti to the saucepan.

Meanwhile, toss the broccoli, oil, salt, and pepper together in a 13" x 9" casserole dish. Roast, stirring once, until tender, about 20 minutes. Stir basil and tomatoes into broccoli and bake 10 minutes longer.

Add the ziti to the broccoli mixture and stir well. Top with the cheese and bake until cheese browns and bubbles, about 10 minutes.
