Introduction

This is a variation on a Rachael Ray recipe. I use molasses instead of syrup when I'm feeling the urge to be indulgent. (Thanksgiving time) To lighten it up, use sugar-free dark maple syrup. Ingredients

    1 butternut squash
    2 Tbsp butter
    2 Tbsp Molasses
    1/2 tsp nutmeg
    dash of black pepper

Directions

Preheat oven to 400 degrees.

Cut butternut squast lengthwise and remove seeds. Place halves cut side up on baking sheet. Slather a talbespoon of butter all over each half (You can be more generous with the butter if you wish). Use a spoon and drizzle 1 tablespoon of molasses over each half. Sprinkle the nutmeg and black pepper over each half.

Roast the squash for 40 to 60 minutes or untill husk is fork tender. Serve a whole half as is or you can remove the meat of the squash and serve it in a dish. Enjoy!
