Ingredients

    3 1/4 -1/2 c grated potatoes
    1 medium onion, chopped
    2 eggs
    1/2 c flour
    1 tsp salt
    1/2 tsp pepper
    2 Tbsp oil for frying

    Mix and fry. Serve with applesauce

    These tasted great! My only issue was I wish the directions and just what constituted a serving size were clearer. I had a devil of a time trying to estimate 1/16th. Otherwise, Fabulous! - 9/7/10

    Same recipe my mom makes. Love them with salsa, the hotter the better. Substitute the salt and pepper and add cajun seasoning to taste. Gonna try baking them instead of pan fry. - 11/30/11

    I used to make these in the restaurant. We served them with sour cream. We now can serve them with fat free or low fat sour cream. So much better than the hash browns that you buy. - 3/17/14

    these pancakes were great! I made them just the right size too for the 16 quantity. I agree with mom2alex2004, they do need a bit more time than regular pancakes to cook through. Thanks for sharing!!! - 10/9/08

    @SINGFREELY: have you tried yoghurt (plain, and strained, to make it thicker)? I make my own yoghurt (have an EasyYo, got some yoghurt to start me from my grandma, and I use regular milk) and I was just reading the recipe and thinking how good these would taste with some yoghurt :) - 3/1/14

    I added crumbled bacon (to get my 3 y/o to eat meat!). The pancakes were thicker than I expected, but I let them cook a little longer & they were really good. - 4/28/08

  • My wife & I really liked these! Wish I'd read further down the reviews & rinsed the potatoes first; pretty slimy otherwise. I found that a slightly rounded 1/4 cup of mix gets close to the serving size. Used medium high heat to keep from getting soggy. Needed to add a little extra oil per batch. - 5/21/16

  • I didn't see any directions. I enjoy a lot of SP's recipes and most of them do not tell you the amount per serving. Thanks to Wildflower I know that it makes 8 pancakes. I will try them. - 2/28/16
