Number of Servings: 20


    Can of Adzuki Beans (in water) 235g drained
    Egg, fresh, 5 large
    Coconut Oil, 6 tbsp
    Silver spoon low calorie sweetner, 20 grams
    Cocoa, dry powder, unsweetened, 6 tbsp
    Baking Powder, 1 tsp
    Baking Soda, 0.5 tsp
    Vanilla extract, imitation, alcohol, 1 tbsp


Preheat oven to 165'C

Drain and rinse beans in colander. Shake off excess water.

Place beans, 3 of the eggs and vanilla into blender. Blend until beans are smooth. Immersion Stick blenders work fine as well.

Sift together cocoa powder, baking soda, and baking powder.

Beat oil with sweetener.

Add remaining two eggs, beat well.

Pour bean mix into egg mix and mix well.

Finally, stir in cocoa mix, and beat the batter hard until smooth.

Spoon into 20 bun paper cases

Bake for 20 minutes. Cakes are done when the tops are rounded and firm to the touch.
