    3 Medium Sweet Potatoes
    1 Teaspoon Olive Oil
    2 Shallots (finely chopped)
    1/2 C Fat Free Ricotta Cheese
    1/4 Teaspoon Salt
    1/4 Teaspoon Black Pepper
    1/4 Teaspoon Ground Ginger
    1 Tablespoon Brown Sugar
    1/4 Cup Grated Ligh Parmesan Cheese
    2.5 Tablespoons chopped Fresh Sage


Preheat ove to 400 degrees. Pierce potatoes with fork and bake for 1 hr.. Remove from oven and cool.

Place Olive Oil in skillet over medium heat. Add shallots and cook and stir until softened and beginning to brown (about 10 minutes)

Scoop out pulp of potatoes. Blend potato, ricotta, salt, pepper, ginger and brown sugar in the blender until smooth.

Stir in shallots, parmesan cheese and sage.

Bake for 30 minutes.
