Introduction

My puttanesca gets its anchovy taste from the Worcestershire Sauce. Ground Turkey is leaner and helps to keep it healthy. Great to make up ahead for a workday lunch. Ingredients

    Olive Oil, 2 tbsp
    Garlic, 3 clove, chopped
    Onions, raw, 1 medium (2-1/2" dia), chopped
    Black Olives,one can, sliced
    Lea & Perrins, Worcestershire Sauce, 2 tsp
    Turkey, Ground turkey, 93% lean, 8 oz
    Tomatoes, red, ripe, canned, wedges in tomato juice, 1.5 cup
    Tomato Paste, 1 can (6 oz)
    Whole Wheat Spaghetti, cooked (pasta), 1.5 cup
    Parmesan Cheese, grated, .5 cup

Directions

Add the garlic and chopped onion to the olive oil; add the ground turkey and stir occasionally as the turkey cooks. Add the Worcestershire Sauce when its about half way done.

when the turkey has no pink left in it, add the olives, tomato paste and tomatoes, and add any spices or wine that you like in your sauce at this time too. Cook it all together for about 20 minutes, or until it seems that the flavors have had time to mingle.

Divide the spaghetti, about 2 oz portions, into plastic containers and then put an equal amount of sauce over each and sprinkle with the parm. Cover, label and freeze for lunches.

Makes 6 good lunches for work.
