Number of Servings: 24

Ingredients

    3 1/2 cups Whole Wheat Flour
    1 16 oz can Libby's Canned Pumpkin
    1 cup Sugar
    1/2 cup Honey
    2-3 tsp Splenda or other sweetener
    6 Egg Whites (large)
    1/2 cup Margarine (room temperature)
    1/2 cup Water
    1 tsp Nutmeg
    1 1/2 tsp Cinnamon
    1 tsp Salt
    2 tsp Baking Soda

Directions

Preheat oven to 350 degrees F. Grease two 9x5 loaf pans with non-stick spray.

In a large bowl combine flour, sugar, salt, and baking soda.

In separate bowl combine pumpkin, margarine, water, honey, sweetener, and spices. After the wet ingredients are mixed well, slowly add in egg whites.

Combine wet and dry ingredients together, mix well. Pour the batter into pans and bake for 1 hour, or until you can insert a toothpick in the middle and it comes out clean.

Makes 2 loaves, with 12 servings per loaf (24 servings total).
