    2 1/4 cups white whole wheat flour
    1 cup instant oats
    1 serving vanilla whey protein powder
    1 tsp salt
    1 tsp baking soda
    3/4 cup of palm sugar
    dash of cinnamon
    dash of nutmeg
    1 cup pureed apricot (boil dried apricot, then puree in blend with some of the water used in boiling)
    1/2 cup chopped dried apricot
    1/2 cup chopped pecans
    1 egg
    1 tsp vanilla
    3/4 cup of unsweetened applesauce
    1/2 cup butter (softened)
    1 jar no sugar added apricot jam


In large mixing bowl, mix two cups of flour, oats, 1/2 cup palm sugar, dash of cinnamon, nutmeg, salt, baking soda and protein powder. Mix thoroughly.

In separate bowl mix applesauce, apricot puree, butter, egg, vanilla, the chopped apricots and half of the chopped pecans. Mix the wet and dry ingredients thoroughly.

Pour batter in 8X11 greased pan. Mix apricot jam, the remaining nuts, 1/4 cup sugar and 1/4 cup flour. Spread mixture on top of dough.

Bake at 350 degrees for 35 minutes
