Ingredients

    1 can Beans, great northern
1 can Beans - Cannelini white kidney beans
    Collards, 10 cup, chopped
2 cup diced Ham, extra lean (5% fat)
1 smoked turkey leg (for flavoring only)

Directions

This is easy as can be! Clean and chop 10 cups of collard greens. Put a pot on medium heat and add 2 cups of water. Take the collards, put em in that pot with pepper to taste and some hot sauce. Add the smoked turkey leg, and cook on low heat, for about 2 hours. If the greens are still tough, cook em some more. If they're tender, let em be! Just before serving, remove the turkey leg, and cut up the ham and add to the pot. Add the beans and heat through. If you like smoked turkey leg, eat it. If not, pitch it--it did it's job! Enjoy! P.S. This can be very SALTY, so if that bothers you, add a peeled potato about 3/4 of the way through the cooking--it will sop up that extra salt.
