    Crisco Vegetable oil 2 Tbsp
    Celery, sliced 1 Cup
    Scallions, sliced 1/2 cup
    Garlic, 2 cloves, chopped
    Sweet red pepper, sliced 1 cup
    Snow Peas, 1/2 cup
    Baby green beans, sliced 1 cup
    Broccoli, small flowerettes, 1 cup
    Crumini Mushrooms, sliced 1 cup
    Carrots, sliced 1 cup
    Bok choy, chopped 1 1/2cup
    Add seasonings and herbs to your taste... I use
    oregano, basil, marjoram adn cilantro
    Cornstarch, 2 Tbs
    1 cup water
    Lite soy sauce, abt 3 Tbsp
    2 cups brown rice,cooked per instructions on package


Heat oil in large pan, add garlic, scallions, celery and red peppers. Cook on high temp for 2-3 minutes.
Add snow peas, beans, carrots and broccoli and cook covered for 5 minutes. Add mushrooms and bok choy, cook covered, adding a little water, until vegetables are as tender as you like them.
Mix 2 Tbsp cornstarch with 1 cup water and a little soy sauce and pour over vegetables, mixing together.
Serve over brown rice.
Makes 4 1 cup servings of rice with plenty of vegetables.
