A great Sunday casserole you can mix the night before and bake in the morning. A great Sunday casserole you can mix the night before and bake in the morning.

    6 large eggs, lightly beaton
    12 slices "Louis Rich" turkey bacon
    1 medium onion, chopped
    1 cup cottage cheese (1%)
    2 cups chedder or colby cheese (lowfat)
    1 cup swiss cheese (lowfat)
    4 cups thawed hash brown potato (from grocery freezer)
    Salt and Pepper to taste


Brown onion and bacon in a non-stick skillet, drain oil once bacon is crisp. Chop bacon into small pieces. Combine chopped bacon/onion mixture to other ingredients. Spray a 13X9 glass pan with PAM cooking spray. Pour mixture into prepared pan. Bake at 375 degrees for 35 - 40 minutes or until mixture is firm and fork comes out of center clean. Let cool for 10 minutes and cut into approximately 2" X 4" bars.
