    For the topping:
    1/2 cup all-purpose flour
    1/3 cup firmly packed brown sugar
    1/2 tsp salt
    1/2 tsp ground cinnamon
    4 TBS cold butter
    1/2 cup toasted chopped pecans

    For the sweet potatoes:
    3 lb sweet potatoes
    1/8 cup milk
    1 tsp vanilla extract
    3 TBS unsalted melted butter
    2 eggs
    1/4 cup maple syrup
    1/8 cup firmly packed brown sugar
    1 tsp kosher salt
    Freshly ground pepper to taste
    Pinch of fresh ground grated nutmeg


Preheat oven to 450 degrees
Roast potatoes with skin in tightly covered roasting pan for 1 - 1.5 hours. When cool to the touch, remove the skins and discard. Mash 1/4 of the potatoes in a bowl. Cube the remaining potatoes and stir into the mashed potatoes.

Prepare the topping:
In a bowl, stir together the flour, brown sugar, salt and cinnamon. Using a pastry blender, cut the butter until the flour mixture has been completely absorbed into the butter. Stir in the pecans. Set aside.

Lower oven to 350 degrees

In a bowl, whisk together the milk, vanilla, butter, eggs, maple syrup, brown sugar, salt, pepper and nutmeg. Add the milk mixture to the sweet potatoes and stir until well blended.

Transfer the sweet potato mixture into a 3 qt rectangular baking dish and sprinkle with the gratin topping. Bake until the toppings is golden and crispy, 45 -60 minutes. Let cool for 10 minutes. Serves 10.
