Introduction

This colorful lentil soup will satisfy the taste buds of any soup lover. This colorful lentil soup will satisfy the taste buds of any soup lover.
Number of Servings: 8

Ingredients

    Lentils, 2 cup (best with 2-3 different color lentils)
    Carrots, raw, 5 medium, chopped
    15 Oz Can Stewed Tomatoes, 1 serving
    Roma Tomatoes, 4 serving, cut in quarters
    Red Onion, 1 serving, chopped
    Garlic, 4 clove, minced
    Green Peppers (bell peppers), 1 cup, chopped
    Thyme, ground, 1 tbsp
    Basil, 1 tbsp
    Vegetable Broth, 7 cup
    Bay Leaf, 3 serving

Directions

Bring all of the ingredients to a boil in a large pot and turn to low heat and simmer for about 90 minutes stirring occasionally. You may alternatively use a crock pot. Place all ingredients on high for 1 hour and turn to low heat and let cook for an additional 3 hours. Serves about 8.
