Ingredients

    1 cup chopped onion
    1 cup red bell pepper, chopped
    1 tbs olive oil
    2 cloves of garlic, minced
    1 28 oz can of crushed tomatoes
    4 cups chicken broth
    2 cups water
    1 cup dry lentils

    Season to taste:
    cayenne pepper
    cinammon
    salt & pepper
    rosemary
    parsley
    bay leaf

Directions

Saute veggies in oil about 5 minutes, add seasonings. pour in tomatoes, chicken stock and water. Add lentils, bring to a boil then simmer for 1 1/2-2 hours until lentils are tender.
