    *Ancient Harvest Traditional Whole Grain Quinoa, 1 cup
    Vegetable Broth, 2 cup
    Shallots, 3 tbsp chopped
    Mushrooms, fresh, 4 medium
    Garlic, 1 clove
    Brie Cheese, 1 oz
    Canola Oil, 1 1tsp


Sautee shallot, garlic and mushrooms in just enough oil to get it started.

Add the vegetable broth a bring to a boil.

Add the quinoa, lower the heat to medium-low and cook covered for 15 minutes.

Uncover and slowly melt in the brie until all the water is absorbed and the quinoa is light an fluffy.

Serves 2 as a meal (with a light salad and seared tofu) or 4 as a side dish.
