    Chickpeas (garbanzo beans), 2 cups
    Red Bell Peppers, sweet, red, fresh, 1/2 cup, chopped
    Green Bell Peppers 1/2 cup chopped
    Onions, 1 cup, sliced
    Chopped Parsley, 3 tbsp
    Scallions, raw, sliced
    Leeks, 1 leek, chopped
    Juice from Lime Wedge,
    Garlic, 3 cloves


Mix all ingredients together. For the best flavor, let salad sit in refrigerator for an hour. Serves 8, about a half cup each.
