    1/2 cup chopped Baby Spinach
    1/2 tsp minced Garlic
    1 tsp Extra Virgin Olive Oil
    3 large Egg Whites
    1/2 tbsp grated Parmesan Cheese


Put the first 3 ingredients in a pan over low-medium heat. Heat for several minutes, being careful not to burn the garlic. Add the 3 egg whites, and let the eggs coat the pan. Cook for several minutes, stirring frequently, until the eggs are fully cooked (are white and opaque). Transfer to your plate, and grate some parmesan cheese on top.
Makes 1 serving.
