    non-stick cooking spray
    1 cup sliced red peppers
    1/2 cup sliced yellow peppers
    1/2 cup sliced orange peppers
    1 cup sliced onions
    1 cup thinly sliced celery
    1 cup sliced (then quartered) cucumbers
    1 cup sliced carrots
    1 cup pineapple juice
    3 tbsp ketchup
    4 cups crab meat (i used the imitation for nutrition)
    bit of water
    1 tbsp corn starch


Spray wok with non-stick cooking spray
Get wok hot
Add peppers, onion, and carrots - let veggies cook, tossing until they are glazed well (turn brownish)
Add juice, ketchup, crab meat and celery
Cook till juices gets hot - about 3 minutes
Add cucumber
Allow to simmer just long enough for cucumber to get warm - toss constantly
Use a bit of water and stir in corn starch
Add to pan - stir till thicken
Remove from heat

Makes 10 - 1 cup servings
