Introduction
Use your favorite organic potatoes and onion from your local farmers' market. You can make your own applesauce too for an extra special meal. Ingredients

1 pound of Potatoes
1 cup Dlced Onion
2 Small Eggs OR 1 Large Egg
1/2 Cup Chick pea Flour or Whole Wheat Flour
1 Tablespoon of Canola Oil
1/4 teaspoon of Salt
1/8 teaspoon Pepper to taste
1 Cup prepared Applesauce
Directions
Makes 2 large servings, (about 8 to 12 pancakes):
Wash potatoes well, and grate them into shreds in a large colander. With clean hands, squeeze out all of the liquid from the shreds, until satisfied that very little remains for about 2 minutes.
In a large mixing bowl, beat the egg and add the potatoes, flour, onions, salt and pepper. Mix well.
In a non stick skillet over medium high heat, add the tablespoon of canola oil and spread out with a spatula.
Using a 1/4 cup measuring cup, measure out each pancake right onto the oil, and press downwards with the spatula. When pancakes are brown and golden underneath, gently turn over each pancake with the spatula.
Serve hot when golden brown on both sides. Spoon 1/2 cup of Applesauce per person atop of the pancakes, or on the side.
