    1 large eggplant, slices, 1/4" thick
    2 large cans whole tomatoes in water
    5 garlic cloves
    1/2 tbsp black pepper
    3 tbsp minced onion
    6 oz shredded mozzarella


Heat oven to 350F. Dice tomatoes, add crushed garlic, pepper and minced onion. Layer eggplant, tomatoes, and mozzarella in pan. You should use a pan small/large enough to give 3 or 4 layers. Cook approx. 40 minutes. Makes 4 servings

For ease of clean-up, line pan with foil or coat with cooking spray.
