    1 onion, minced
    2 cloves garlic, minced
    1 T grated ginger
    1 T olive oil
    3 T soy sauce
    2 carrots, chopped
    1 zucchini, chopped
    1 cup chopped bok choy
    6 mushrooms, quartered
    1 cup chopped seitan
    1 small can bamboo shoots, drained
    1 t toasted sesame oil
    1/4 cup cashews


In a medium skillet or saucepan, saute the onion, garlic, and ginger in olive oil until the onion is soft.

Add the soy sauce and carrots, cook a few more minutes, then add the zucchini, bok choy, and mushrooms. Cook 8-10 minutes on medium heat, stirring often.

Add the remaining ingredients and cook another 5-10 minutes.
