This is traditional Mexican bread pudding with a few tweaks to make it healthier. This is traditional Mexican bread pudding with a few tweaks to make it healthier.
Number of Servings: 16


    2 1/2 cups 1% milk
    3 large egg whites, beaten
    8 slices HEB raisin bread
    1 cup oats
    1/4 cup melted butter (I can't believe it's not butter, light)
    1/3 cup brown sugar
    4 ripe bananas, chopped
    1 teaspoon vanilla
    1 cup reduced fat mexican blend cheese


Tear raisin bread into bite-sized pieces and put in a large bowl. Stir in milk, beaten egg whites and oats. Let sit for 20 minutes. Preheat oven to 350F. Lightly grease an 8"x 8" pan. Mix melted butter, brown sugar, chopped bananas and vanilla together in a bowl and then add to bread mixture along with cheese. Stir lightly until combined and pour into lightly greased dish. Bake 60 minutes or until set. Cool before serving. Makes 16 2"x 2" servings.
