    1 Tbsp Olive Oil
    1/4 to 1/2 Cup Finely Chopped Onion
    1 Clove Garlic, minced
    1 14 oz can Vegetable Broth
    1 29 oz can Crushed Tomatoes
    1 14 oz can Diced Tomatoes
    1 Tsp Salt
    1/4 Cup Ricotta Cheese (Optional)
    1/4 Cup Sour Cream (Optional)


In a medium to large sauce pan sautee onion in olive oil over medium-high heat until translucent. Add garlic and cook for 30 seconds.

Add vegetable broth, crushed tomatoes, diced tomatoes and salt. Simmer for 15-20 minutes.

Add Ricotta until fully encorporated. Remove from heat and stir in sour cream.

Serve immediately.
