Introduction

Ingredients

    2 cups all-purpose flour
    2 cups cornmeal
    1/2 cup Splenda blend for baking
    7 teaspoons baking powder
    2 teaspoons salt
    3 eggs, beaten
    3/4 cup milk
    1 3/4 cup non-fat sour cream or plain yogurt
    1/3 cup vegetable oil
    1 cup mashed cooked sweet potato
    1/2 cup sweet corn kernels
    1/2 cup fineley chopped onion
    1/2 cup finely chopped bell pepper (I use a mixture of red, orange, and green)
    8 oz Hillshire Farm Lite Smoked Kielbasa (1/2 a sausage), diced

    Optional: a few dashes of hot pepper sauce

Directions

In a large bowl, combine the first five ingredients.

In a second large bowl, combine the eggs, milk, sour cream, oil and sweet potatoes. Stir into dry ingredients just until moistened.

Fold in corn, peppers, onion, and sausage. Pour into a pan, skillet, or muffin pans.

Bake at 425 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Serve warm.

I usually serve these with Cajun 15-bean soup and/or southern-cooked greens. Yum! The leftover muffins usually get eaten for breakfast the next day.
