Introduction

A nice pumpkin soup with a little zing. Well seasoned, not Spicy as in chili peppers. A nice pumpkin soup with a little zing. Well seasoned, not Spicy as in chili peppers.

Ingredients

    2c canned pumpkin
    1c coconut MILK
    1 1/2c chicken broth
    1tsp Cumin
    2 Bay leaves (they didn't even weigh a gram on my scales)

Directions

Throw all the ingredients into a heavy bottomed pot. Cook on medium heat until just bubbling. Stir occasionally. Turn heat down to simmer for the remainder of the 25 minutes. Collect the bay leaves. Season with salt 7 pepper to taste (I never add salt). Garnish with a few pumpkin seeds. Serves 6.
