    6 cups unbleached all-purpose flour
    1 1/2 cups millet, hulled
    2 tablespoons olive oil
    2 pkgs yeast
    2 teaspoons sugar
    2 teaspoons salt
    Additional flour as needed


Bring water to a boil and pour over millet, let cool to lukewarm (110 degF). Stir in sugar and yeast, let sit until bubbly (10 minutes). Add 2 cups flour and beat vigorously for 2 minutes. Add remaining flour 1 cup at a time until dough holds together enough for kneading. Knead until bouncy and smooth (between the millet seeds). Put in oiled bowl, turning to oil top of bread, cover with damp towel, and let rise until doubled (45-60 minutes). Punch down, divide in half, and shape into two loaves. Place in non-stick or parchment-lined loaf pans, cover with damp towel, and let rise 45 minutes. Preheat oven to 375 degF. Bake 30-45 minutes, until bread tests done. Makes 2 loaves, 16 slices each.
