Ingredients

1/2 c dry quinoa
1.5 c water
Pinch salt
1.5 tbsp olive oil
1 cup onion, diced
1 tbsp garlic, minced
1.5 tsp chili powder
1 tsp cinnamon
1/4 tsp Ginger
1/4 tsp grated nutmeg
Salt to taste
Directions
Makes 5 1-cup servings
Heat dry quinoa in a saucepan over medium heat until golden brown and smells toasted. Add water and pinch of salt, bring to boil. Reduce to simmer, cover and simmer for 20 minutes.
Meanwhile, heat olive oil in sauté pan. Sauté onion and garlic for few minutes till transparent and softened. Add spices and cook and stir for 1-2 minutes. Add sweet potato and 1/4 cup water. Cover and simmer for 10 minutes. Add more water 1/4 cup at a time if needed to keep vegetables from drying out. Add raisins, cover and simmer 10 more minutes or until potatoes are soft.
Serve vegetables over bed of quinoa.
