    1 eggplant
    1.5 tablespoons tahini
    2 cloves garlic
    1.5 tablespoons lemon juice


Roast eggplant whole at 350 for an hour or until skin starts to separate from flesh. Let cool. Then cut end off eggplant and scoop out flesh. Discard skin. Puree eggplant, garlic, tahini and lemon juice until smooth.

Makes 8 2-tablespoon servings.
