Single Serving Chicken Noodle Soup Single Serving Chicken Noodle Soup

    1 clove garlic
    1 celery stalk
    1 big carrot
    3 oz of boneless chicken breast (usually about 1/3 to 1/2 of a breast)
    1 tsp olive oil
    1/4 cup chopped onion
    1/4 tsp. black pepper (I halved this when I made it a second time)
    1 cup chicken broth, low fat and low sodium
    1/2 cup water
    1 oz. (dry, uncooked) pasta (one small handfull)
    1 tbsp. fresh parsley (or 1 tsp of dried parsley)
    1/2 tsp. dried dill


You can use egg noodles or any short pasta for this recipe (I use Penne Pasta). Mince garlic; chop celery and carrot and set aside. Rinse and cut up chicken into bite sized pieces; set aside. Heat olive oil in a medium saucepan to medium high heat. Saute garlic, onion, celery and carrots for 3 to 4 minutes until onions become translucent; add black pepper, raw chicken, broth and water.

Bring to a boil; cover and lower heat to a simmer; cook for about 5 minutes. Add pasta and simmer all ingredients for about 8 to 10 minutes until pasta is cooked. (Watch the liquid.. may need to add more water.) Stir in parsley and dill and serve.
