Introduction
These are my favorite holiday cookie. I got the recipe from 101cookbooks, and she had altered them a little. I altered them a little more, adding low fat cream cheese instead of all the butter, making them a lower fat alternative. They still aren't a diet cookie by any means, but they are simply the best! Ingredients
-
Powdered Sugar, 2 cup, unsifted
*Flour, white, 4 cup
Baking Powder, .5 tsp
Vanilla Extract, .5 tsp
Salt, .5 tsp
Butter, salted, 2 sticks, softened
low fat cream cheese, 1 (8oz) pkg, softened
Directions
sift flour, baking powder and salt in a medium bowl, set aside. In a mixing bowl, put butter and cream cheese. Blend till soft and fluffy. Add powdered sugar, one cup at a time, mix well. add vanilla, blend. Add flour in two parts, mix till dough forms a ball and comes away from the sides.
Take dough out of the bowl, divide into two parts. Flatten down to an inch, wrap in wax paper, and stick in fridge for 30 minutes to chill thoroughly.
Preheat oven to 350. Line a large cookie sheet with parchment, or spray it really good with no stick spray. After chilling the dough, roll it out to 1/4 to 1/2" thickness, and cut with small cookie cutter. I use something that isn't bigger than 1". Each flattened piece should make about 36 cookies for a total of about 75. Bake in the oven for 7 - 10 minutes, or until bottom edges are slightly golden. Cool on a wire rack. For an even more rich taste, dip one side in melted semi-sweet chocolate chips. Yum!!
