Introduction

Ingredients

    Soy Flour, .25 cup
    Flour, white, .25 cup
    Wheat germ, crude, .1 cup (1.5 Tbsp)
    Banana, fresh, 1 small (6" to 6-7/8" long) (mashed)
    Egg substitute, liquid (Egg Beaters), 2 tbsp
    Sunflower Oil, 1 1tsp - half tsp in batter, 1/2 tsp for pan
    Molasses, 1 tbsp
    Baking Powder, 2 tsp
    Vanilla, 1/2 tsp
    6 Tbsp water
    dash of salt
    dash of cinnamon if desired

Directions

Mash banana and add wet ingredients (egg, molasses, oil, water, vanilla). Mix dry ingredients together and then add wet ingredients all at once. Stir just until blended. Let sit for a couple minutes to let the baking powder react (will result in lighter pancake). Lightly oil pan and pan-fry as usual for pancakes. Makes 6 pancakes, about 3 inches in diameter. Top with maple syrup or jam or yogourt or fresh fruit... Toppings not included in calorie count.
