Ingredients

1/2 an onion, diced
3 mushrooms, cleaned and chopped
3 eggs, lightly beaten
4 oz. Prime Rib, trimmed, sliced thin into bite-sized pieces
Non-stick cooking spray
Directions
Sautee the onions and mushrooms in non-stick cooking spray over medium heat, until the mushrooms have lost their moisture and the onions are translucent. Remove from pan, mix in the pieces of prime rib while the vegetables are still warm, and set aside.
Spray the pan again. Add the beaten egg, swirling it around the pan for even distribution. Let the egg set up for about a minute, lifting the edges of the egg and tilting the pan so the liquid egg will run under the edges to cook. Once the egg is set, add the steak/veg mixture to the half of the omelet nearest the pan's handle. Leave the omelet open for about a minute, then fold the egg over the filling. Remove from heat.
Makes 2 servings.
